Ingredients
  

  • 1 cup white rum
  • 1/2 cup fresh lime juice
  • 1/4 cup granulated sugar
  • 1/4 cup finely chopped fresh mint leaves
  • 3 envelopes unflavored gelatin
  • 1 cup cold water

Instructions
 

  • Combine the rum, lime juice, sugar, and half the mint in a saucepan and heat until the sugar dissolves.
  • Bloom gelatin in cold water for 5 minutes.
  • Whisk bloomed gelatin into rum mixture until fully dissolved.
  • Pour into jello shot cups and refrigerate for 4 hours until set.
  • Garnish with remaining mint before serving.
